Just made one of the most successful dishes of my dad career. Catfish fillets w/ fresh dill, thyme, lemon. So good.
@phooky I just learned how to slow-cook a ham hock in a pot of collards and peas. The hock itself is gross, but the food it touches becomes delicious.

The slow cooked hock slowly dissolves into the stew, leaving some disgusting skin and ankle bones. But everything else becomes magic.
