@phooky I just learned how to slow-cook a ham hock in a pot of collards and peas. The hock itself is gross, but the food it touches becomes delicious.

The slow cooked hock slowly dissolves into the stew, leaving some disgusting skin and ankle bones. But everything else becomes magic.
@jmjm does the hock become delicious over time? I hate wasting meat! (I completely agree that pork is best at making the things around it amazing, which is probably why I like mapo tofu so much.)
